Banana Bread Muffins
If you’ve had one (or more) of the banana bread muffins from one of our farmstands, and you enjoyed them, this post is for you! Here’s the simple recipe.
Ingredients
1/2 cup (1 stick) butter, softened
1 cup of sugar
1 tsp vanilla extract
2 eggs
1 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
3-4 ripe bananas, mashed
Instructions
Blend butter, sugar and vanilla. Add eggs and mix well. Mix in dry ingredients, followed by the bananas.
For muffins: pour in muffin tin (with liners) bake at 350 for 20-22 minutes.
For loaf pan: grease pan, pour in and bake at 350 for 55 minutes.
